African Peanut Soup

There is nothing more satisfying than a cup of soup this monsoon, Indulge with this rich Mediterranean cuisine peanut flavoured soup.

Ingredients of African Peanut Soup (for two)

  • 6 tablespoon peanut butter
  • 3 cup of vegetable stock
  • 2 tablespoon raw peanuts
  • 2 cloves
  • 1/2 bunch kale
  • 1/4 cup of tomato puree
  • 1 tablespoon ginger
  • 1 small onion
  • Pepper (if necessary)


Method of cooking

Boil the vegetable stock into a bottomed pan. Add clove, minced ginger and garlic, chopped onions and salt. Let it cook on a slow flame for 20 minutes. On the other side on a medium sized pan, add peanut butter and tomato puree. Post blend, add 1 to 2 cup of vegetable stock to it and whisk it well. Slowly pour the remaining mixture into the vegetable stock. Sparkle the chopped kale and pepper (if necessary). on a medium-low flame let it cook for about 15 minutes. Garnish with cut peanuts, serve hot.
