COCONUT ICE CREAM
INGREDIENTS:
- Thick milk – 2 cups
- Sugar – 1 ¼ cup
- Finely shredded coconut – 1/2 cup
- Whipped cream – 3/4 cup
- Egg yolk – 2
- Corn flour – 1 ½ tablespoon
- Ice cream essence – To Taste.
METHOD:
*Add the sugar to the milk, heat and stir well. Add the coconut and the cream on slow heat stirring continuousely.
* Remove the pan from the heat.
* Beat the egg yolks with the corn flour in another bowl and add this gradually to the milk mixture.
*Stir till well blended. You may add any light food colour to make it attractive. Freeze till set and serve.
