Curd Rice

INGREDIENTS:

Rice – 1 Cup (Well cooked and mashed)

Curd – 2 cups

Green Chilies – 3 (chopped)

Ginger – small piece (chopped)

Mustard seeds – 1 teaspoon

Urad Dal – 2 teaspoon

Dry red chili – 3

Shallots – 5

Coriander Leaves – ¼ cup (chopped)

Salt – As needed

Oil – 1 ½ tablespoon

Curry leaves – 1sprig

 

PREPARATION:

Heat oil in a pan; splutter mustard seeds and urad seeds. Then add dried red chilies into the pan. Saute well.

Now add chopped ginger, shallots, green chilies and curry leaves and sauté it for a few minutes. Switch off the flame and then add curd. Mix well.

Add the mashed rice into it. Sprinkle required amount of salt. Stir and mashed well. If mixture is too thick,  add enough water. Garnish it with chopped coriander leaves and serve it with pickle/pappadam.
