PUFFED RICE BALLS/ PORI UNDA

INGREDIENTS:

Puffed rice – 4 cups

Jaggery – 1 cup

Water – ½ cup

Ghee – 3 teaspoon

Cardamom Powder – 1 teaspoon

 

PREPARATION:

Dissolve jaggery in water and bring to boil. After it melts, filter it to remove any impurities.

Add this filtered solution in the heavy bottomed pan. Boil jaggery solution, till it becomes 1 string consistency.

Then add the puffed rice, 1 teaspoon of ghee and the cardamom powder to the pan and mix them together evenly.

Remove the pan from heat. Immediately transfer the mixture into a bowl.

Apply ghee in the palm and take a portion of mixture and press firmly between hands. Quickly makes lemon size balls. Shape them tightly. Repeat the process quickly with the remaining mixture.

Puffed rice ball is ready.  Let it cool down and store it in an airtight container.

Serve it as an evening snack with tea or coffee.
