RED VELVET CAKE

INGREDIENTS

Maida- 2 3/4 cups

Baking powder – 2 teaspoons

Baking soda – 1/4 teaspoon

Cocoa powder – 1/4 cup

Salt- 2 teaspoons

Red food coloring- 2 tablespoons

Unsalted butter- 1cup

Granulated sugar – 2 cups

Eggs – 3

Vanilla extract – 1 teaspoons

Orange zest- 1 tablespoon

Buttermilk – 1 cup

FOR ICING

Butter- 1/2 cup

Cream cheese – 1 cup

Powdered sugar- 4 cups

METHOD

Heat the oven to 350°F.  Grease and flour baking dish.

Sift the measured flour, salt, baking powder, and baking soda together twice. Whisk the cocoa, food colouring, and water in a small bowl until smooth

Beat the measured butter in a large. Add the until the mixture has lightened in colour and become fluffy Add the eggs one at a time, the vanilla, and the orange zest. . Add the cocoa mixture and mix until evenly incorporated. Alternately add the flour mixture and the buttermilk, starting and ending with the flour mixture, until just incorporated.

Divide the batter between the cake pans and spread the tops evenly with the spoon or spatula. Bake until a cake about 30 minutes. Remove from the oven and let the cakes cool in their pans on a rack for 10 minutes

For the icing:

Beat the butter in a large bowl using an electric mixer until creamy,. Add the cream cheese and beat until the mixture is fluffy.  Add the powdered sugar 1 cup at a time, beating for 30 seconds after each addition, until the mixture is creamy. Spread between layers and on top and sides of cooled cake
